Mèthode Ancestrale is the original method of producing sparkling wine. It is an uncomplicated, pure expression of the grape and of its origins. A natural fermentation begins in the tank but is completed in the bottle. When only a small, yet critical amount of sugar remains, the fermenting wine is bottled. The precise moment of bottling must ensure suffient pressure for a healthy mousse, but not so much as to burst the bottles. This single ferment process allows for the grapes to be picked riper, lending the wine increased depth and character.
